Seems to be a spare set Red/Black, not connected to anything

Having unused wires and connectors under consoles is quite common. If everything is working, then I wouldn't worry about it.

I was looking to use them for the depthfinder as there seems to be a set of wires that aren't attached to anything. If I can figure out which set of wires under the console aren't in use, I track the wires from end to end and piggy back them for my power source.

I have a set on my rig, I think they are for a bow fiashfinder

Yeah. I know where the unconnected end is. I don't know where they put the unconnected end though.
