I've carried a 12 ft jon with no problems. One thing that helps is a strap across the front attachment points (in the truck bed) and a pully in the middle of the strap. I would back up at the ramp and slide it off. Then use the pully to help pull it back on.

Not too familiar with the older mercury's, I do have an older Evinrude 5.5 hp that has a lever you flip. Having it unlocked allows it to pop up if you hit something.

I would go with a side mount. To me, having a little more distance seems more balanced. Especially when you're in a situation where you might want one hand on the steering wheel and one on the throttle.

Kind of like driving a car with a four speed.

If you think you'll actually use them, maybe store them in the oar locks. Out of the way and still ready to use.

I just carry one extra long oar for pushing and maneuvering in the right conditions.

Maybe you don't leave much of a wake when on plane but I always slow to a crawl when passing a kayak or canoe (0:18s) In NH that would get you a $270 performance award if caught.
