Use 5200 to seal between the fitting and the hull. Should alleviate any corrosion concerns.

Use a stainless fitting. Attwood makes em, they are low profile and unlikely to snag on said stump or rock.

Having power trim would be hugely helpful if you run your boat at different load levels. For instance if sometimes there are 4 of you and sometimes just 2. However, I run a 16' vee and use an old Johnson 35 (1983 so probably 30 hp at the prop) and that extra 5 HP sure is nice. Would be nice to have ...

Exactly. If hand launching, a single battery and a light boat maybe even a canoe or square back. If using a trailer, 14' v with two motors, a higher thrust on the back for getting from the far end back to the launch and a volt sipping 30lb up front for easing around fishing. It's something to keep in mind. A bad connection can cause heat as well. A couple boats ago I used jumper cable wire to run a bow trolling motor with the battery at the back. I've used jumper cables for years. Starting a small outboard is a small momentary load, smaller than any car. And the charging current is low. Might be different on a larger motor.
