If you want the gold standard by which all bacon is measured try bacon from this guy: bentonscountryhams2.com

It's not cheap but it's being used by lots of hoity toity chefs across the country and best of all it's right on the way when I go to Madisonville Marine to get something for my boat. It's smoked and better by far than anything else I've tried.
 
OH man, Jim! You HAD to post that recipe...that does not look like something that will fit in my diet but it sure looks good...too good! I wish I had the stuff to make one right now. :mrgreen:
 
Anybody know if there is such a thing as beef bacon? Reason why I ask is that I heard someone ask the butcher for it the other day at the grocery and I had never heard of it. Of course neither had the butcher!

Never heard of it....unless it's beef jerky, but that would be a stretch IMO.
