Most years I do several large group fish fry's. Been doing it with a small electric fryer. Last one (this spring) I spent over three hours just cooking the fish on that little thing. Next one should go allot faster. Bought this bad boy at Northern Tool yesterday. Two separate burners that run independently of each other (Others I looked at both burners had to be used) turning out 40k btu's. Total size is @ 5.4 gallons of oil (cooking wise it will be closer to 3 gallons).

I'll try to remember to take some pictures next time Jim! Last one was all of the Perch from Ice fishing as well as @ 11lbs of Walleye and Northern fillets. Think we are doing Walleye/Perch/Channel Cat/Northern soon.
 
I use Crisco. I'd love to use lard but.....

350* to 370* is what I run the oil temp at. This allows me to cook the fish and not over cook the batter and the batter does not soak up the oil. Any lower and the batter does get a bit on the oily side. Too hot and the batter gets done before the fish. My normal batter is Fry Crisp. I like to use darker beers in my Beer Batter. Nordeast is my go to beer in MN, but I have used Stouts in the past. When I have Yuengling Lager on hand I will use that as well as their Black and Tan. UNLESS I am doing a Louisiana style batter. Then I use a plan American Lager (Bud, MGD ect) and cayenne.
 
This is what I been using.
Corn meal
Tony Chachere creole
Flour
Louisiana hot sauce
Milk

Combine 50/50 corn meal and bread flour. In a bowl combine milk, tonys, hot sauce to taste. Need a cup or 2. Roll fish in milk mixture. Bread with corn meal. Deep fry. Ill let mine drain a minute and re fry for a minute. Makes it crispier. You could substitute milk with beer or whatever im sure.
 
Keystone, does that fryer come with a cover? I bought a small gas one this year. And its just not big enough for fries etc. I may invest in one of these.

Yes, straight Crisco. I have tried all kinds of oils over the years. Cheap vegetable oil leaves it tasting like, well cheap vegetable oil! Other oils can get kind of expensive such as Peanut oil etc and I have not been able to see that much of a difference over the years to justify the extra cost. A classic case of don't fix what isn't broken. Like I said above, I would LOVE to use lard, but most folks can not/will not eat it. IMO nothing fry's food better than lard. (I do use it when I make Chili Verde though.)

In the older fryer I was able to cover it and reuse if it wasn't too dirty. Not sure how I will do this, but most likely I will drain/strain back into the cans and reuse what I can.

No, but making one should be easy enough. For the time being I plan on running it through a strainer right back into the cans.

How do you remove the oil from a fryer like this to put back for later use?

Let the oil cool. Lift the pans out and pour SLOWLY through the strainer into the cans.
 
So keystone got me inspired. I was gonna send the wife to northern to get one of these. I figured id look on amazon and just get it delivered. I ended up finding this one instead. It will be here friday. Were frying on saturday.

That one was on my short list Bugpac. Nice fryer for sure. Enjoy it this weekend (post some pics of your results).
