First I started with a 3 day beer brine.

Then I build a firepit in the back yard.

Skewer it on the spit and stuff it full of rosemary.

10-15. Should be about half that. I need to put a smaller pulley on the motor shaft.

1 gallon apple juice
4 dark beers ( I used amber bock)
3/4 cup salt
1 pound brown sugar
2 diced onions
5-6 tb of chopped garlic


Boil the apple juice and dissolve the sugar and salt.

Pour it over the bird. Add everything else. Shake the bird up and down a few times to mix. I also added a little ice to help cool the brine faster.

Put it in the fridge. At least 12 hours, not more than 3 days.
