Smoked another butt today. Turned out great. Not as much bark as I wanted but more than the last one.

I use this recipe but with a smoker.http://www.foodnetwork.com/recipes/tyle ... pe-1941398 I use about 2/3 the vinegar for the BBQ sauce. It seems overpowering but not when you add it to the meat.

it was delicious. i use a sauce that i can only find back home. it is made in richmond. "Sauers BBQ sauce" I get it in gallon containers from a local country store (you cant even get these off thier website). When i do a butt or a whole hog i will take the sauers, add apple cider vinegar, beer and crushed red pepper. i will baste about every hour or so.
