I've removed it in past boats, but you'll surprised how much freeboard you'll lose. In past crawdads I have removed the stock foam blocks and the waterline almost came over the boat. I replaced the stock blocks with free styrofoam blocks I got from my local tractor supply store, which they use to ship landscape trailers in.

Removing or adding foam should not in any way affect the freeboard of your boat. The only time the foam actually does its job is if the boat is filling full of water.
