I would like to know If anyone here has used the one part epoxy Cabela's sells or Gorilla Glue to patch up a few rivets that leak? I am going to try to rebuck them also, but if that doesn't work has anyone used the other 2 option?

I used the stick epoxy, and then put steelflex over it. I have no leaks.
 
the boat rapair sticks at cabelas worked good for me. just heat it up and the stuff gets up under the rivet and seals and dries instantly. its a good idea to buck em first.
 
The Cabela's stuff worked ok for me at first but then after I ran the boat a bit they started leaking again. I would recommend bucking the rivets instead of trying to plug them with the Cabela's stuff.
 
I drilled mine out, and replaced them with 1/4-20 stainless hardware. Fastenal has a great selection of pan head screws with hex drive and nylock nuts. Worked like a charm!!!

Added some 5200 around the new bolts and torqued them down.
