steering wheel on a 14' V bottom?

Hi I'm an engineering student and I want to rig up a steering wheel system for my 14' V-bottom boat. It has an outboard motor in the picture but this is for use with a trolling motor.

I was thinking of using a pulley system attached to the tiller of the trolling motor (I intend on getting a foot petal controlled throttle).

This would be after some modifications as shown in the drawing below the pic and would be right behind the drink cooler...

I'd be more apt to do a stick steer so it doesn't intrude on your interior space like a wheel and console would. Foot throttle would give way to a simple lever throttle too. Isn't like a 25 will need to be constantly throttled. I made my throttle setup. Simple engineering and machine work. You could probably use it for school credits too.
