I have a new Xpress 1440 for small lake fishing and I'd like to install some pedestals where the pedestal can be removed and the seat lowered. Are these simply installed with stainless sheet metal screws? Does this last?

Screws won't usually be a permanent solution. Try to use nuts and bolts and some kind of backing material to give the seat a good grip.
 
If your boat has a ribbed floor,you can put an aluminum plate across the ribs. Bolt the pedestal to the plate,then you can rivet the plate to the ribs. This will spread out the area. I'd use the biggest rivets I could find.
 
I'm guessing you want to install these on the bench seats?

As stated above, sheetmetal screws won't hold for very long for a pedestal base. there's a lot of leverage forces at the base when the pedestal is in use. Bolts, washers, nyloc nuts, and even backing plates are the norm for this installation. If you can't access the underside of your bench for the above materials toggle bolts are a reasonable secondary. they aren't as good of an installation as the others, but will do a fair job.

PEM fasteners are a good choice if you are dealing with thinner aluminum.

Is this what you are trying to accomplish? (see pic) I have bench seat pads that snap in place, when the boat is in use, and the clamshell seat inserts thru a hole in them.
