I am planning on removing the split rear bench and secondary floor from my Jon boat and installing a more sturdy aluminum tread plate floor with aluminum bracing underneath and a center console. Just wondering if spray/expanding foam would be alright to use between the hull and floor? If so what have you guys used on your rigs?? Let me know , thank you!

I used 2 part mix foam. The real key to adding foam is to make sure you have enough and that it is closed cell.

Check out my build it's in my signature it has a decent amount of foam pictures.

It wouldn't. It isn't closed cell foam and it would absorb water. Folks on here use pourable (mixed) foam that is closed cell, closed cell insulation (billets from big box stores), and some even use pool noodles. Don't use the expanding foam it will add weight as soon as water hits it.

Where can I get the mix foam?

Not to highjack your thread but have you checked the price on aluminum diamond plate?
I was going to use it to replace rotted plywood on my boat trailer side-steps last week and the plate quote was ~$370.
Yikes.
