I bought a couple of the brackets noted in the subject and wanted to know if there is anything I should worry about?

They are essentially going to secure some 2x4s together for my deck/platform.

Will not be touching the boat at all.
Will not be openly exposed to water.

They will be securing 2x4s, which will be covered by 3/4" plywood, and some outdoor carpet.

Any corrosion, or rusting, or other issues I may, or may not have to be concerned about?

I couldnt find them in SS, so I just went with these https://www.lowes.com/pd_12934-166-...y_sales_dollar|1&page=1&facetInfo=USP|$1 - $5.
 
If they never touch your tin you are better


I am still afraid of the potential for the reaction - even from water running between the two metal -

Stay away from salt water!
 
Zinc plating is basically for indoor use, hot dipped galvanized is for outdoor use. They will rust eventually but by the time they are a problem the wood will be rotten and need replacing anyway.

As said above, if in a saltwater environment then they will disintegrate very quickly.
