What kind and where can I buy some? Closed cell so it won't absorb water, right?

The best foam you can use is the pink or blue extruded styrofoam board. Typical thickness required for under floors is 1.5 inches. White 'bead board' styrofoam can also be used, although, it's a bit messy because of all the little white beads when you cut it. Both of these are closed-cell foams.
 
be careful not to spill gas if you use the board foam - it will dissolve the foam very quickly
 
Usually any home improvement store sells it, its used as housing insulation.
