I am trying to wire in a new universal kill switch into my outboard motor and im trying to figure out if it is normally open or normally closed...Im new to working on motors and was wondering if there is a way to figure it out. thanks for all of your help

First off not all motors are the same. Always nice to let us know what we are trying to help you on.
Lets assume you have a Johnson or Evinrude though.
Your switch in this case would be normally open.
The wire you need to run through the switch is the black/yellow.
Run it through the switch to any good ground.
