When connecting multiple terminals, I know they should be stacked large to small. But can you or should you have washers between them? Or one star lock washer on top.
I also have been told that wing nuts on battery terminals are not to be used, according to codes.
 
Washers not needed. I would use a nylock nut, so it won't loosen on it's own, but I have used wingnut in the past & tightenend with pliers well - never had a problem with that either.

The main thing is that the connections are clean & terminals are crimped tight.
 
FWIW I throw a SS split lock washer down on the battery post 1st, as the bottom of the post isn’t threaded and a large ring terminal could have a poor connection otherwise.

Agreed, no wing nuts ... otherwise known as a “really good way to blow out an expen$ive stator”!
