I have cooked and eaten carp and gar all kinds of ways. some ways are better than others, but they are not a bad tasting fish; they are better than a striper to me. Now that we have Tilapia in our waters we also smack a few of them when we are out, they are very good table fare as well, between a Crappie and a White Bass kinda.

Speaking of which, the gar should be getting up pretty soon; fun times ahead!
 
I spent eight months in Bosnia a few years back and in Sarajevo many of the local restaurants had an outside tank with both carp and trout swimming around. You could point one out and they'd cook it for you on the spot. Somehow, I always chose the trout.
