I didn't want to highjack the other "What should I Q " thread . The answers on brining can be found all over the web . look up Brining101, it makes for some good reading . It does take extra planning , but the results are great . I've done pork, poultry , fish , and shrimp with good results. I really like smoked chicken , I like to use it to make Smoked chicken Fettachini (sp) or a good smoked chicken salad with some fresh dill , celery , and onion in it .
