You'll probably get a good idea by standing up on the seats and fishing or possibly even mocking up something cheap first just so you have an idea. I haven't seen many 14' v's that could be decked to the top and fished from without being tippy, but 60" is plenty wide. Just depends on how much roll your hull is gunna have.
 
It's going to be way more stable then it is now as long as you install the decks right on top of the seats. Actually remove the wood seats and install the plywood right on top of the brackets.
I have a 15' semi-v modded like this and the extra weight helps out tremendously on the stability. I take this boat everywhere in all kinds of conditions and can stand and fish without any issues. My transom is of the 15" variety so your rig should be more stable then mine. Put a 25hp motor on your boat. Bigger the better.
