Great Video! I do it the same except cutting it at the Tail. When I get to the Tail I simply lay the Filet over the tail and remove the Skin while holding the Carcass. I use the same method on all the Pan Fish.
 
With those flathead cats there's a chunk of meat on each side of it's face where the cheek would be. It's worth while to get it if the flathead is a bigger one.
