Never filleted a catfish. But now I know how. You made it look easy.

Great Video! I do it the same except cutting it at the Tail. When I get to the Tail I simply lay the Filet over the tail and remove the Skin while holding the Carcass. I use the same method on all the Pan Fish.

With those flathead cats there's a chunk of meat on each side of it's face where the cheek would be. It's worth while to get it if the flathead is a bigger one.

We have this new restaurant not too far away called Huckleberry's. They use catfish in their fish and chips. I would say it is the best fish & chips I've had around here.
